Ingredients

For the Bison Patties:

  • 1 pound ground bison
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Sea salt and black pepper to taste
  • Avocado oil for cooking

For the Lettuce Wraps:

  • Gem Lettuce Leaves
  • Sliced tomatoes
  • Sliced red onions
  • Sliced pickles
  • Sriracha (optional)
  • Avocado slices

Directions

  1. Prepare the Bison Patties:
    In a mixing bowl, combine the ground bison, garlic, oregano, smoked paprika, salt, and black pepper.
    Gently mix the ingredients until they are well combined.
  2. Form the Patties:
    Divide the bison mixture into 4 equal portions. Shape each portion into a burger patty, about 1/2 to 3/4 inch thick. Make an indentation in the center of each patty with your thumb; this helps the burgers cook evenly and prevents them from puffing up.
  3. Cook the Bison Patties:
    Preheat a grill pan or skillet over medium-high heat.
    Lightly oil the grill grates or skillet with avocado oil to prevent sticking.
    Grill the bison patties for about 3-4 minutes per side for medium-rare to medium doneness.
    The internal temperature of the patties should reach 130-140°F (54-60°C) for medium-rare, or 145-160°F (63-71°C) for medium.
  4. Assemble the Lettuce Wraps:
    Carefully separate large lettuce leaves to create “buns” for your bison burgers.
    Place a bison patty on a lettuce leaf.
    Top with sliced tomatoes, red onions, pickles, and avocado slices.
    Drizzle with siracha.
