Ingredients

For the Collard Wraps:

  • 4 large collard green leaves
  • 1 cup grated carrot
  • 1 cup thinly sliced red cabbage
  • 1 cup cucumber, julienned
  • 1 cup sauerkraut 
  • 1 avocado, sliced
  • 1/2 cup broccoli sprouts 
  • 1/4 cup sunflower seeds (lightly toasted)
  • Salt and pepper, to taste

For the Turmeric Tahini Dressing:

  • 1/4 cup tahini
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon pure maple syrup or honey (optional, for sweetness)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Sea salt and pepper, to taste
  • Water (for thinning, if needed)

Directions

1. Prepare the Collard Leaves:

  • Wash the collard green leaves thoroughly and pat them dry.
  • Trim the tough stems from the collard leaves, making them easier   
  • to roll.

2. Make the Turmeric Tahini Dressing:

  • In a small bowl, whisk together the tahini, lemon juice, olive oil, ground turmeric, maple syrup (if using), ground cumin, and garlic powder.
  • Add water gradually until you reach your desired dressing consistency. Season with salt and pepper to taste. Set aside.

3. Assemble the Collard Wraps:

  • Lay one collard green leaf flat on a clean surface.
  • Spread a generous spoonful of the turmeric tahini dressing evenly over the collard leaf.
  • Arrange a handful of grated carrot, sliced red cabbage, julienned cucumber, sauerkraut, avocado slices, sprouts, and toasted sunflower seeds in the center of the leaf.

4. Roll the Collard Wraps:

  • Fold in the sides of the collard leaf.
  • Starting from the bottom, tightly roll up the collard leaf, encasing the fillings.
  • Slice the wrap in half diagonally for easier handling.

5. Serve and Enjoy:
