Francesca Alfano Recipe – These Thai Turkey wraps come together quickly and make for a wonderful high protein, low-carb lunch to support blood sugar balance. They are tasty, satisfying, and a meal you can have on repeat for busy weekday evenings.

Ingredients

- 2 tsp olive oil
- 2 tsp ginger, minced
- 2 cloves garlic, minced
- 1 lb Turkey, ground
- 2 tbsp coconut aminos
- 1 tsp sesame oil
- Salt, to taste pepper, to taste
- 1 Head Boston lettuce
- 4 Tbs fresh cilantro, chopped
- 4 Tbs fresh basil, chopped
- 2 Tbs dry-roasted peanuts, chopped
- Avocado, for topping
Directions
Prep
1. Grate ginger.
2. Mince garlic.
3. Slice scallion.
4. Roughly chop peanuts, basil and cilantro.
Make
1.Heat olive oil over medium heat add ginger, white parts of scallion, and garlic and stir for one minute.
2. Add ground turkey, coconut aminos, and sesame oil and stir cooking for about five minutes. Season with salt and pepper to taste.
3. Serve: Layer lettuce, then ground turkey, sprinkle cilantro, basil, scallion and peanuts on top.
