Ingredients

  • 8 Large collard green leaves, washed and patted dry
  • 1 ripe avocado, sliced
  • 1 cup sauerkraut
  • 1 large carrot, julienned
  • 1 cup broccoli sprouts

For the Ginger Miso Almond Butter Dressing:

  • 1/4 cup almond butter
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh ginger, grated

    Directions

    • Prepare the Collard Wraps: a. Trim the thick stem from the center of each collard green leaf to make it easier to roll. b. Lay the collard leaves flat, add avocado slices, sauerkraut, julienned carrots, and broccoli sprouts along the center of each leaf.
