Jerke Chicken Ingredients

  • 2 small boneless skinless chicken breasts
  • 1 tsp. salt
  • 1 ½ tsp. jerke spice
  • 1 tsp. extra virgin olive oil

Directions

  1. Season chicken breasts with salt.
  2. Coat evenly with jerke spice mixture.
  3. Heat oil in medium skillet over medium high heat.
  4. Cook chicken for about four minutes on each side.
  5. Remove from heat and let rest for 10 minutes, before slicing.

Cauli Rice Ingredients

  • 2 tsp. extra virgin olive oil
  • 1 head cauliflower, grated
  • Sea salt to taste
  • 3 tsp. water
  • 2 tsp. mint leaves, shredded
  • ½ cup pomegranate seeds

Directions

  1. Heat oil in a large skillet over medium heat.
  2. Add cauliflower.
  3. Season with salt. Sauteed for 5 minutes.
  4. Add water. Sauteed for five more minutes or until soft.
  5. Remove from heat. Mix in pomegranate and mint.

To serve top with sliced Jerke Chicken.
