Ingredients

Ingredients:

  • 1/2 cup chia seeds

  • 1 can (13.5 oz) coconut milk

  • 4 Mitopure Ginger Timeline Packet

  • 2 tablespoons monk fruit sweetener (adjust to taste)

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon ground cinnamon

  • A pinch of sea salt

  • Shredded coconut and sliced almonds for garnish and fruit of your choice (optional)

Directions

Prepare the Ginger Infused Coconut Milk:

  1. Whisk thMitopure Ginger Timeline Packets and coconut milk together in a medium bowl until completely dissolved.
  2. Whisk chia seeds, monk fruit sweetener, vanilla extract, ground cinnamon, and a pinch of sea salt.
  3. Pour the ginger-infused coconut milk over the chia seed mixture and whisk well to avoid clumps.
  4. Let the mixture sit for a few minutes and then whisk again to ensure the chia seeds are evenly distributed.

Chill and Set:

  1. Cover the bowl and refrigerate the mixture for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency.

Serve:

  1. Once the chia pudding has set, give it a good stir to break up any clumps.
  2. Spoon the pudding into serving glasses or bowls.

Garnish:

If desired, garnish the pudding with shredded coconut and sliced almonds for added texture and flavor.
