Valentines Day Paleo Dinner For Two

SERVES 2
Kale Caesar Ingredients
  • 1 bunch Lacinato Kale, stems removed
  • 1 Persian Cucumber, sliced into rounds
  • ½ tbsp sesame seeds
  • ½ tbsp nigella seeds
  • 1 tbsp sliced raw almonds
Cashew Caesar Dusle Dressing
  • Yields: 1 Cup
  • 1/2 cup raw cashews, soaked overnight
  • 1/4 cup alkaline water
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • 1/2 tbsp Dijon mustard
  • 1/2 tbsp garlic powder
  • 1 small garlic clove
  • 1/2 tbsp Worcestershire sauce
  • 2 tbsp dusle flakes
  • Sea salt to taste
Roasted Grass Fed Steak Ingredients
  • 1 Flat Iron Steak (About 1-1 ½ pounds)
  • 3 tbsp red miso
  • 1 tbsp young extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp coconut sugar
  • 2 tbsp alkaline water
  • Sea salt and pepper to taste
Pumpkin Seed Gremolata
  • 1 garlic clove
  • ½ cup pumpkin seeds
  • 3/4 cup flat Italian parsley
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • Sea salt and pepper to taste
Chocolate Avo Mouse Ingredients
  • 2 medium ripe avocados
  • 1/4 cup almond milk
  • ¼ cup raw cacao powder
  • pinch sea salt
  • 4 tbsp cup monk fruit
  • 1 tbsp cacao nibs
  • ½ cup strawberries, quartered

Valentines Day Paleo Dinner For Two

The secret is packing it with ingredients that enhances nitric oxide in your body (literally gets you in the MOOD) such as grass-fed steak, pumpkin seeds, almonds, dark chocolate and leafy greens.

Go on, put some extra spice on your Valentine’s plans this year!

KALE CAESAR

      1. Rip the kale leaves and place in a salad bowl.
      2. Massage the kale with your desired amount of dressing.
      3. Toss in Persian cucumbers and sprinkle with seeds and nuts. Enjoy.

Caesar Dusle Dressing

      1. Combine all ingredients in a blender.
      2. Blend on high speed until smooth and creamy.
      3. Add garlic and lemon zest and continue to cook for 1-2 minutes.
      4. Remove from pan and toss with parsley.

MISO MARINATED GRASS FED FLAT IRON STEAK WITH PUMPKIN SEED GREMOLATA

      1. In a small bowl, whisk together miso, olive oil, apple cider vinegar, coconut sugar, water, sea salt and pepper.
      2. Coat the steak evenly in the rub.
      3. Cover the steak and allow to rest in the fridge for at least 1 hour.
      4. Remove the steak from fridge and allow to come to room temperature, 20-30 minutes on the counter.
      5. Grilled over medium/high heat for 4-5 minutes on each sides.
      6. Remove from grill and allow to rest for 10 minutes before slicing.
      7. Slice and top with gremolata.

Pumpkin Seed Gremolata

      1. Mince garlic.
      2. Coarse chop pumpkin seeds.
      3. Rough chop parsley.
      4. Mix together garlic, pumpkin seeds, parsley, lemon juice, olive oil, sea salt and pepper.
      5. Spoon on top of steak or your favorite protein.

CHOCOLATE AVOCADO MOUSSE

      1. Place avocados, almond milk, cacao powder, sea salt and monk fruit in a food processor or blender.
      2. Blend until smooth.
      3. Chill in the refrigerator for 2 hours.
      4. Scoop into serving cups and garnish with cacao nibs and strawberries.
