Almond Butter Blondies

Can eating a blondie make your skin glow….what? This week we made over our cherished childhood blondie into an almond butter blondies. Almond butter is high in Vitamin E which is an important nutrient for skin health. Studies have shown that Vitamin E can protect the skin from oxidation. So, eat a blondie and check out the glow.

Yields: 16


  • 2 large eggs
  • 1 cup coconut sugar
  • ¾ cup almond butter
  • ¼ cup grass fed butter, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup coconut flour
  • pinch sea salt
  • 1 teaspoon baking soda
  • 1 cup chocolate chips


  1. Preheat oven to 350 degrees
  2. Place eggs, coconut sugar, butter, almond butter and vanilla in a mixer
  3. Cream together at medium speed until light and fluffy
  4. Mix in coconut flour, sea salt and baking soda
  5. Add chocolate chips
  6. Pour into a well greased 9x13 baking dish
  7. Bake for 30 minutes
  8. Let cool and cut into bars
