There are so many uses of cauliflower that we have seen from rice to pizza crust. This week tried and usual and surprising delicious us of this versatile veggie. We decide to make a sweet chocolate pudding out of it. It's richness and creamy texture translates really well to a dessert.
Yields: 6 servings
1 medium head cauliflower
1/3 cup raw cacao powder
1 ½ teaspoons grass fed gelatin
2 tablespoons maple syrup
½ cup coconut milk
Cut cauliflower into florets. Cook in boiling water until cauliflower is completely soft. Strain and pat dry.
While cauliflower is still warm place in a high-powered blender with raw cacao, gelatin, maple Puree until completely smooth. Pulse in coconut milk.
Let chill in fridge for 3 hours. Enjoy!
